After a meeting on Thursday, I decided to walk to the office instead of taking the metro. I'm glad I did. Seeing the foliage actually filled me with joy and I got in a mile of exercise and fresh air. #latergram

It's been a weekend of restocking the fridge and the pantry. I finally found (gorgeous) bulk apricots for my breakfasts at my favourite halal shop. Still completely stumped as far as meal planning for the week though.

I decided to reset a big after getting to Brussels last week and immediately getting food poisoning. Salad for breakfast: arugula, tomatoes, salmon, boiled egg, capers & a bit of brine, cucumbers, seed mix & EVOO. Off to the side are tiny strawberries and

I finally found a place to get stock bones in Brussels. The halal butcher gave me about 8lbs of beef bones for €2!! I'm so freaking happy! Now I can make bone broth and stock later this week.

Feeling kind of bad ass using my iPad as a second monitor doing #ux course planning. I use an app called AirDisplay by Avatron. It works really well and I'll use this until I settle down and get a proper desk and monitor.

This is the first meal Gilbert and I have made with the new kitchen tools I bought. The salad was made putting the onions and some of the cucumber through the Paderno Spiralizer. The borlotti bean soup was made in the Instant Pot electric pressure cooker.
