The chef spent long time first working in Paris then in 1980 and 90s NY. He might be a legend, now hiding in Kanazawa and still listening to jazz.

We had a good chat with him and some great fish, but somehow the much cheaper lunch sushi taste from the market at lunch was still lingering.
