木柴直接在麵包烘烤區燃燒,一開始會燒黑窯壁,因此得名,但在數小時的加熱下,高溫會使得黑碳燒成白色的灰,經過徹底的清潔,窯烤的麵包是不會有沾附黑碳 的痕跡。
