jeffsauer: Run water through natural casings after soaking for 30-45 minutes
jeffsauer: Tie off end of casing and start stuffing!
jeffsauer: Wrap around in a circle and start making links
jeffsauer: Twist off links in 5 inch increments, alternate direction of twisting with each link
jeffsauer: Smoke on indirect heat for 1-3 hours until a pink smoke ring forms and sausage is cooked thoroughly. Finish in the oven if needed.
