Braised & roasted pork heart. I've never eaten heart before. It was fantastic. Stuffing with bread crumbs & onions paired with crispy kale & roasted cranberries. I told you .... Best meal ever.

Smoked pork shank. With a little cognac flame & a bed of mussel stuffing. A side of cognac sauce. There are no words to describe how delicious this was. This was pork from our friends at SlowPoke Farm who shared this meal with us. The sauce was like meat
