emdbarrie: Chop carrots into coins, 1 can tomato paste, 2 c. red wine, 3 c. chicken broth
emdbarrie: Melt the butter, brown the beef on med. high heat

emdbarrie: Ground pepper is also your friend
emdbarrie: Browned on one side
emdbarrie: Brown all the sides, including sticking it on its end
emdbarrie: Add carrots, 2 bay leaves, 3 rosemary branches, a small bunch of parsley
emdbarrie: 2 c. chicken broth PLUS
emdbarrie: 1 more c. chicken broth
emdbarrie: 2 c. red wine
emdbarrie: Stir a bit, then cover on med. low heat
emdbarrie: Simmer on medium low heat for...
emdbarrie: 3 hours then check seasoning. I added 2 tbsps. mustard.
